Galaxy Ice Cream Sandwich Recipe

These Galaxy Ice Cream Sandwiches are creamy, fluffy, and out of this world DELICIOUS!

INGREDIENTS

18 whole graham crackers

1 (14 oz) can sweetened condensed milk

8 ounces cream cheese, softened

1 and 1/2 teaspoons vanilla

2 cups heavy cream

Food coloring (black, pink, blue, and purple)

1 (12 oz) bag purple candy melts*

3 Tablespoons coconut oil

Sprinkles

INSTRUCTIONS

1. Line a 9×13-inch baking dish with plastic wrap, leaving a good amount of overhang on the sides. Break the graham crackers in half and arrange them on the bottom of the pan. To solve the issue of extra space on the side, use a ruler as a “receding wall” underneath the plastic wrap along with a freezer-safe item that’ll fit behind it. I used five fun-sized Butterfinger chocolate bars.
