African Chicken and Peanut Stew Recipe


1 + ½ tbsp vegetable oil
1 large onion, peeled and chopped
2 cloves garlic, peeled and minced
1 thumb-sized piece of ginger, peeled and minced
¼ tsp salt
½ tsp black pepper
1 tsp cayenne pepper (optional)
1 tbsp ground coriander
2 red chilli peppers, finely chopped
1 bay leaf
4 chicken breasts, chopped into bite-size chunks
150g (1/2 cup plus 1 tbsp) smooth peanut butter
480ml (2 cups) chicken or vegetable stock (use bouillon for gluten free)
1 x 400g (14oz) can chopped tomatoes
1 large sweet potato, peeled and chopped into bite-size chunks
1 cup roughly chopped peanuts
To Serve:
Boiled rice
Fresh coriander/cilantro
Toasted peanuts*
Garlicky kale**
