Amish Breakfast Casserole Recipe


INGREDIENTS

1 lb. sliced bacon diced
1 medium sweet onion chopped
6 large eggs lightly beaten
4 cups frozen hash browns shredded, thawed
2 cups cheddar cheese shredded
1 1/2 cups small curd cottage cheese
1 1/4 cups Swiss cheese shredded
1 lb. mild, bulk sausage
1/2 red bell pepper diced
1/2 green bell pepper diced
fresh, snipped chives for garnish

INSTRUCTIONS
  1. In a large skillet, cook bacon and onion until bacon is crisp; drain.
  2. In a separate skillet cook sausage and bell peppers.
  3. In a very large mixing bowl, combine the remaining ingredients; stir in bacon mixture and sausage mixture.
  4. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.
  5. Bake, uncovered, at 350° for 35-40 minutes or until set and bubbly.
  6. Let stand for 10 minutes before cutting.


NOTE
You can also make this ahead and refrigerate overnight before baking.
